Ingredients
1 cup Flour
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1 teaspoon Cinnamon
½ teaspoon Salt
2/3 cup Oil
1 cup Sugar
2 Eggs
1 ½ cups Carrots, grated
½ cup each Walnuts and Raisins (optional)
Cream Cheese Frosting
8 ounces Cream Cheese
1 ½ cups Confectioner’s Sugar
2 teaspoons Vanilla
Milk
Combine Cream Cheese, Sugar and Vanilla with electric mixer. Add enough milk to thin to a spreadable consistency.
Preparation
- Combine Sugar and Oil. Mix well.
- Add Eggs.
- Stir in Flour, Baking Powder, Baking Soda, Cinnamon and Salt.
- Fold in Carrots.
- Bake @ 350˚ for 30 minutes.
- When cake is cool, spread with Cream Cheese Frosting.
