Ingredients

1 cup Flour

1 teaspoon Baking Powder

1 teaspoon Baking Soda

1 teaspoon Cinnamon

½ teaspoon Salt

2/3 cup Oil

1 cup Sugar

2 Eggs

1 ½ cups Carrots, grated

½ cup each Walnuts and Raisins (optional)

Cream Cheese Frosting

8 ounces Cream Cheese (bar type)

1 ½ cups Confectioner’s Sugar

2 teaspoons Vanilla

Milk

Preparation

  1. Combine Sugar and Oil. Mix well.
  2. Add Eggs.
  3. Stir in Flour, Baking Powder, Baking Soda, Cinnamon and Salt.
  4. Fold in Carrots.
  5. Bake @ 350˚ for 30 minutes.
  6. When cake is cool, spread with Cream Cheese Frosting.

Combine Cream Cheese, Sugar and Vanilla with electric mixer. Add enough milk to thin to a spreadable consistency.
