Ingredients

1 lb carrots

1/2 C mayonnaise

1 T chopped onion

1 T Horseradish

salt and pepper

1/4 C bread crumbs

Paprika and Parsley

2 T butter

Preparation

Peel carrots and leave whole, steam drain and reserve 1/4 to 1/2 C liquid. Slice lengthwise. Layer in a buttered baking dish. Combine liquid, mayonnaise, onion, horseradish, salt and pepper Pour over carrots. Sprinkle with bread crumbs, Paprika and parsley. Bake uncovered at 375 for 15 minutes
