Ingredients
1 tbls olive oil
1/2 cup pitted prunes
1/2 cup dried apricots
1/4 cup dried cherries
2 tbls pine nuts
2 4-inch strips orange zest
2 4-inch strips lemon zest
1/2 cup tawny port
1 smal cinnamon stick
1 cup chicken stock
1 store bought rotisserie chicken, cut in 8 pieces
Preparation
Preheat oven to 400 degrees. Heat oil in skillet over medium heat. Add dried fruits, nuts, and zests and cook, stirring, until nuts are golden, 3-5 minutes. Add Port & cinnamon and cook until syrupy, about 5 mins. Add stock and cook over high heat until reduced, 5-10 mins.
Nestle chicken snugly in a baking dish. Pour sauce over top and turn to coat. Bake until warm through, about 10 mins.
