Ingredients

1 large head cauliflower

2 cloves garlic minced

2 eggs lightly beaten

4 oz low fat grated mozzarella

1/2 t onion powder

Salt and Pepper

Preparation

Chop cauliflower into chunks. Microwave 5 minutes or until soft. Put cauliflower in food processor and blend until it is the consistency of mashed potatoes. Mix all ingredients together in a bowl. Spray baking sheet with oil. Spread mixture - 1/2" thick. Bake at 450 for 20-25 minutes or until lightly brown on top. Add more cheese if desired
