Ingredients
Kosher salt, as needed, plus ½ teaspoon
Vegetable oil spray
1 large head cauliflower, cut into small florets
¾ cup heavy cream
2 ounces cream cheese, cut into small pieces
1½ teaspoons Dijon mustard
1½ cups shredded sharp Cheddar cheese, plus ½ cup for topping the casserole
¼ teaspoon black pepper
⅛ teaspoon garlic powder
Preparation
Preheat oven to 375 deg F. Spray 8 X 8 baking dish with vegetable oil spray.
Steam cauliflower until crisp-tender. Pat dry and transfer to baking dish.
Bring cream to simmer in saucepan and then whisk in the cream cheese and mustard, stirring continuously until smooth. Stir in 1-1/2 C of cheese, salt, pepper, and garlic powder until cheese melts, about 2 min. Remove and pour over cauliflower.
Top with remaining 1/2 C cheese. Bake until brown and bubbly; about 15-20 min.
