Ingredients
Crust:
1 cup uncooked, grated cauliflower
1/4 cup Eggbeaters
2 garlic cloves, crushed
1/2 cup skim-milk shredded Mozzarella
1 teaspoon olive oil
Topping:
1/4 cup chopped tomatoes
1/4 cup low-carb tomato sauce
2 teaspoons Italian seasonings
1 garlic clove, crushed
1/2 cup skim-milk Mozzarella
1 Morningside Farms sausage patty, cooked and chopped up
Preparation
Preheat over to 450 degrees. Shred cauliflower in food processor. Measure out 1 cup, not compacted down. In a bowl, mix cauliflower, Eggbeaters, crushed garlic, cheese, and olive oil. Spray cookie sheet with non-stick spray and thinly spread cauliflower mixture into a round pizza shape. Bake uncovered for 15-20 minutes, then turn broiler on and broil for 1-2 minutes until brown. Chop tomatoes and add 1 teaspoon tomato sauce, seasonings, and crushed garlic. Mix all together and top the cauliflower crust. Sprinkle with remaining grated cheese and the crumbled sausage. Broil pizza until cheese has melted.
