Ingredients
1 whole organic chicken - 4 lbs
1 small onion quartered
1 carrot cut into 1" chunks
1 rib celery cut into 1" chunks
herbs of your choice and measure
salt and pepper
1 soaked ceder plank
Preparation
Soak the plank for at least 1 hour Rinse and dry the chicken salt and pepper interior and exterior mix up veggies and herbs and stuff inside the bird. Tie the legs together to help hold in the veggies. Place on the soaked plank and put on a hot grill. Lid down over high heat until the plank is smoking heavily. Control the heat for the first 30 minutes at 400 degrees. Lower heat to 350 another 45 minutes. Check with thermometer to 165 degrees and it is done.
