Ingredients

Unsalted butter

3 large Celery Root bulbs

1 Tbsp Lemon juice

1.5 Cups Heavy Cream

2 Tbsp crushed Garlic

8 Thyme Sprigs

1 tsp fresh grated nutmeg

2 cups grated Parmesian

Preparation

Preheat oven to 400

Generously butter baking dish

Peel and cut celeriac into thick slices. place in bowl of cold lemony water

Mix cream, garlic, nutmeg and thyme

Drain celeriac and mix in cream.

layer in baking dish and cover tightly with foil.

Bake for 45 minutes

Remove. Turn oven up to 450.

Uncover. Sprinkle generously with Parmesan.

Bake 15 minutes.
