Ingredients
1 lb. Cream Cheese - softened to room temperature
1 lb. Sharp Cheddar Cheese - Shredded
1 cup Butter - softened to room temperature
4 Green Onions - finely chopped
Crushed Pecans - enough to generously cover the Cheese Balls
Crackers - I prefer Wheat Thins
Preparation
Soften Cream Cheese and Butter at room temperature.
In a medium mixing Bowl, hand mix: Cream Cheese, Butter and Shredded Sharp Cheddar Cheese.
Add Diced Green Onions and mix in well.
Divide mixture in half and roll into 2 balls.
Refrigerate until firm - about 2 hours.
Roll Cheese Balls in Crushed pecans until generously covered.
Continue to refrigerate until about 30 - 60 minutes before serving.
