Ingredients
4 cups all-purpose flour, divided
one package (2 ¼ tsp.) active dry yeast
1 ½ cup shredded American or Swiss cheese
1 ¼ cup water
¼ cup sugar
1 ½ teaspoon salt
1 egg
Preparation
In a large bowl, combine 1 ½ cup all-purpose flour & one package (2 ¼ tsp.) active dry yeast. Heat shredded cheese, water, sugar, & salt just until warm (115-120°F) stirring constantly. Add to flour mixture; egg. Beat at low speed of electric mixer for 30 seconds, scraping sides. Beat 3 minutes at high speed. Stir in as much of 2-2 ½ cups of all-purpose flour as you can mix in with a spoon. On a floured surface, knead in enough of the remaining flour to make a moderately stiff dough that is smooth & elastic (6-8 minutes total). Shape into a ball & place into a greased bowl; turning once to coat. Cover & let rise in a warm place till double (1-1 ¼ hour). Punch down; divide in half. Cover; let rest 10 minutes. Shape into 2 loaves; place into greased 8x4x2" loaf pans. Bake in a 350° for 40-45 minutes. Cover for the 20 minutes. Makes 2 loaves.
