Ingredients

1 large cauliflower (2 1/2 lbs)

2 tb. butter

1 small onion, minced

1/3 c. flour

3-4cups of hot milk (how thick you want sauce)

1 1/2c. shredded cheese

1/2 tsp dry mustard

1/2tsp each salt/pepper

1/4 c bread crumbs

1/4 c parmesan (optional)

Preparation

Cut cauliflower into bite size florets. Place in steamer over boiling water; steam until tender (10 mins). Transfer to 8 inch square dish.

Meanwhile in saucepan, melt butter over med. heat; fry onion stirring occasionally until softened (5 mins.) Stir in flour and cook for 1 min then whisk in milk, 1/2c at a time. Simmer whisking until it starts to thicken (8 mins). Then add cheese,mustard, salt and pepper until cheese is melted. Pour over cauliflower.

In a small bowl, mix bread crumbs and parmesan cheese and sprinkle on top.

Bake in 400 oven for 15 mins.
