Ingredients

butter for greasing casserole dish

1 cup sugar

6 Tbs flour

2 cups sharp cheddar cheese, shredded

2 20 oz cans Pineapple chunks, drained (reserve juice)

1 cup Ritz crackers, crushed

1/2 stick butter, melted

3 Tbs reserved pineapple juice

Preparation

  1. Preheat over to 350 F.
  2. Grease inside of a medium (9x13) casserole dish with butter.
  3. Mix sugar and flour in large bowl.
  4. Stir in cheese.
  5. Stir in pineapple chunks.
  6. Spread in casserole dish.
  7. In small bowl combine crushed crackers, melted butter, and pineapple juice.
  8. Spread cracker crumb mix over top of casserole dish.
  9. Bake for 30-40 minutes or until golden brown on top.
