Ingredients
tsp egg replacer in 1 cup water
1/2 cup soy milk*
3 ripe bananas
1 cup whole wheat flour
1 cup white whole wheat flour
1 TB baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup brown sugar
1/3 cup prune preserves
1 tsp vanilla
Preparation
Preheat oven to 375. Mash Bananas and combine all wet ingredients Combine all dry ingredients. Combine both wet and dry together until moistened *add more soymilk if necessary Place in muffin tins with liners or silicone muffin pans Bake 25 minutes.
