Ingredients
2 cups cooked black rice
3-4 shallots, diced
2 cups thawed corn kernals
1 lime zest and juice
2 tsp Ground Cumin
1/2 tsp Dried Oregano
1/4 tsp Dried Thyme
1/2 Cup Dried cranberries
Preparation
Soften shallots in large frying pan over medium heat, add everything else. Serve warm or cold
