Ingredients
1 lb turkey breast
15 cherry tomatoes
¾ c bread crumbs
½ c skim milk
2 egg whites
¼ c chopped onion
½ tsp low fat mayonnaise
1 tbsp dried parsley
½ tsp pepper
Preparation
- Preheat oven to 375 degrees
- In a large bowl, combine egg whites, bread crumbs, milk, onion, salt, oregano, pepper, and parsley
- Add ground turkey and mix well
- Shape 1/4 cup of meat mixture evenly around each tomato, so that the tomato sits inside of the meatball
- Place in baking dish, sprayed with cooking spray
- Bake at 375 degrees for 25-30 minutes
