Ingredients

6 Boneless, skinless chicken breats cut in half (or if you are Larry, 1 boneless, skinless thighs).

3 T Butter

1 t salt

Pepper to taste

1/4 lb mushrooms, cleaned and halved

2 T lemon juice

1 T flour

3/4 C white wine

3/4 C heavy cream

4 C grated jack or Italian blend cheese

Preparation

Brown the chicken in T melted butter (5 minutes to a side).

Toss the mushroom halves in the lemon juice.

Remove chicken from frying pan to a glass baking dish.

In the same pan you browned the chicken, melt another 1 T of butter and saute the mushrooms for five minutes.

Sprinkle mushrooms with flour and stir until blended.

Pour in white wine and stir for 2 minutes.

Pour in cream and stir until sauce thickens.

Add 2 C of the grated cheese and stir until the cheese is melted.

Spoon sauce over the chicken in the baking dish, sprinkle on remaining cheese and bake for 20 minutes in a 400 degree oven.
