Ingredients
1 pkg wild rice mix
1/2 c. chopped onion
1/2 c. butter
1/4 c. flour
1 6 oz can sliced mushrooms
1 can chicken broth
1 container half & half
3 boned chicken breasts
Preparation
Cook rice according to package directions. Drain mushrooms, reserve liquid. Put liquid in measuring cup and add broth to equal 1 1/2 cups. Put liquid plus 1 1/2 cup cream. Add flour, butter, onions & salt and pepper. Cook on medium heat to thicken. Add cooked rice, mushrooms, chicken, pimento & almonds & mix. Butter 2 quart casserole. Put in preheated 350 degree oven and bake 25-35 minutes.
