Ingredients
2-3 chicken breasts
1 packet of success rice (natural grain brown rice)
2 boxes of organic chicken broth
2-4 long carrots
1 cup of chopped celery
1/2 cup of chopped onions
1 clove of garlic
1 Package of mushrooms, sliced
Flour
Salt
Pepper
Butter
2-4 tbsp. of cooking sherry
Preparation
- Rinse chicken, vegetables, and mushrooms thoroughly
- Lightly batter breasts with salt, pepper, and flour
- Sear breasts in a sauté pan (with some garlic)
- Boil breasts for 10 minutes, then set aside
- Sauté the celery, onions, and carrots in some butter and seasoning (salt, pepper, and garlic)
- Cut or shred chicken breasts as preferred
- Add chicken in vegetables to a large pan with chicken broth
- Add rice to broth
- Bring almost to a boil and cook for 10 minutes
- Add sliced mushrooms and cook for another couple of minutes
- Add a couple of tablespoons of cooking sherry and serve hot.
