Ingredients

2 bone in chicken breasts with skin

Frozen Hash brown potatoes

Frozen broccoli or mixed vegetables

Preparation

• Pre heat oven to 325 • Spray skin side of chicken breasts generously with butter flavored Pam • Salt and pepper skin side of breasts after “pamming” • Place skin side down in skillet. Breasts should fit snugly in pan • Generously cover breasts with hash potatoes • Add veggies on top of potatoes • Place skillet in oven • Bake 40 minutes • Remove chicken from oven. Take Dinner plate to cover skillet and turn upside down on plate. You will have 2 beautifully browned chicken breasts complete with starch and veggies

VARIATION: Use a whole chicken. Have the butcher butterfly it
