Ingredients
2 bone in chicken breasts with skin
Frozen Hash brown potatoes
Frozen broccoli or mixed vegetables
Preparation
Pre heat oven to 325 Spray skin side of chicken breasts generously with butter flavored Pam Salt and pepper skin side of breasts after “pamming” Place skin side down in skillet. Breasts should fit snugly in pan Generously cover breasts with hash potatoes Add veggies on top of potatoes Place skillet in oven Bake 40 minutes Remove chicken from oven. Take Dinner plate to cover skillet and turn upside down on plate. You will have 2 beautifully browned chicken breasts complete with starch and veggies
VARIATION: Use a whole chicken. Have the butcher butterfly it
