Ingredients
Canola oil cooking spray
Leftover chicken shredded to equal 2 chicken breasts
16 oz can red enchilada sauce
15 oz can black beans, drained & rinsed
1/2 cup shredded Mexican style cheese
1 tbl cilantro chopped
1 bag yellow corn tortilla chips
Preparation
- Preheat oven to 375 degrees,
- Coat bottom of 9x9 baking dish with cooking spray,
- Combine chicken with the enchilada sauce in a bowl,
- Spread mixture in bottom of pan.
- Spread can of beans over chicken mixture.
- Sprinkle cheese over top.
- Bake until heated through, about 20 minutes, or until it reaches an internal temperature of 165 degrees.
- Sprinkle with chopped cilantro & serve with chips.
