Ingredients
Canola oil cooking spray
Leftover chicken, shredded to equal 2 chicken breasts
16 oz can red enchilada sauce
15 oz can black beans, drained & rinsed
1/2 cup shredded Mexican-style cheese
1 tbl fresh cilantro, finely chopped
Yellow corn tortilla chips
Preparation
- Preheat oven to 375 degrees.
- Coat bottom of a 9X9 inch baking dish with cooking spray.
- Combine chicken with the enchilada sauce in a bowl. Spread mixture in bottom of pan.
- Spread can of beans over chicken mixture and sprinkle cheese over top.
- Bake until heated through, about 20 minutes, until it reaches an internal temperature of 165 degrees.
- Sprinkle with cilantro & serve with tortilla chips.
