Ingredients
1 lb drumsticks
1 T adobo seasoning
1/2 (.18 oz) packet sazon seasoning
1/2 tsp salt
5 large red potatos, peeled and thickly sliced
1 large red pepper, seeded and chopped
1 large green pepper, seeded and chopped
1 large onion, chopped
1 tsp garlic powder
1 bunch fresh cilantro, rinsed, dried and chopped
2 T olive oil
1/2 cup cooking wine
1 tsp. ground cumin
1 tsp. oregano
2 fresh or dried bay leaves
Preparation
- Wash chicken and pat dry, place in a large bowl. Season with adobo, sazon and salt. Place legs in crockpot and cover with potato slices.
- Puree the peppers, onion, cilatro, olive oil, wine, garlic powder, cumin and oregano in blender. Pour over chicken and add bay leaves.
- Cook on low for 6 - 8 hours unitl chicken is easily removed form the bone.
