Ingredients

4 boneless chicken breasts

1 garlic clove cut in half

1/2 lemon

2 tsp. oregano

salt and pepper to taste

1/2 pound Kasseri cheese, cut into 8 thin slices

16 sheets of phyllo dough

Preparation

  1. Preheat oven to 350
  2. Divide each chicken breast in half. Rub chicken with garlic and lemon. Sprinkle with oregano, salt, pepper.
  3. Center a slice of cheese on each chicken portion and roll up neatly.
  4. Line a cookie sheet with foil, brush with melted butter, and set aside.
  5. Unwrap phyllo and cover with damp paper towel to prevent drying out.
  6. Brush a single phyllo sheet with melted butter. Top with a second sheet and brush with butter.
  7. Wrap one chicken roll in phyllo and brush liberally with melted butter. Continue procedure for all rolls.
  8. Bake at 350 for 1 hour.
