Ingredients

1.25 lbs Chicken - preferably white meat cut into small cubes. (cooking for kids)

2 bulbs Ginger Root - 1/4" slices

4 stalks of Green Onion - chop into 1/4" pieces.

2 Chicken Boullion cubes

1 Beef Boullion Cube

1 TBS Fish Sauce

1 TBS Sea Salt, then add “To Your Liking”

4 pints Water

4-6 pints Water

10 oz. Rice Noodles (pre soaked in water, cut into 3-4" lengths for kids)

1/3 cup vegetable oil

Preparation

Use a 6 quart pressure cooker or regular pot.

  1. Heat veg. oil to med high, add chicken and 1/2 TBS Salt and cook until chicken turns white. Do not overcook.
  2. Add 4 Pints water, beef and chicken boullion cubes, ginger root, fish sauce. Bring to boiling and simmer for 1 hour. ( If you have a pressure cooker, 1/2 hour).
  3. *Remove lid and strain broth to clear up the soup.
  4. Add 4-6 pints of water (taste after 4 pints to making sure not to dilute the taste out of the broth), and Add 1 package 10 oz. pre-soaked rice noodles.
  5. Cook on Medium heat until noodles are translucent, approx 10 min.
  6. Either sprinkle chopped green onions over pot or individual bowls of soup.
