Ingredients
5 pounds chicken pieces, legs and thighs best
6 cloves garlic
1 T dried oregano
2 tsp pepper
2 tsp salt
1/4 c red wine vinegar
1/4 c olive oil
1/4 c Spanish green olives, pitted and whole
1/4 c capers with a bit of juice
1/2 c pitted prunes, chopped small
1/2 c dried figs or dates, chopped
1/2 c brown sugar
3 bay leaves
1 c white wine
2 T parsley, chopped, for garnish
Preparation
Combine all ingredients except parsely in a large shallow baking dish. Marinate overnight, turning occasionally. Bake at 350 F for 50 minutes, basting occasionally. When done it should be a deep golden color. Sprinkle with parsley.
