Ingredients
1/2 c. flour
1/2 tsp salt
1/4 tsp pepper
1/4 c. water (maybe more; to get a coatable consistency)
1 tsp lemon juice
1 egg, beaten
1 tsp baking powder
1 large chicken breast; cut into half inch cubes
Preparation
Combine all ingredients to make the batter
Heat canola or peanut oil in sauce pan until hot enough to cause sizzle when drops of batter enter oil (350-375 degrees). Coat small chicken pieces in batter and fry until golden brown about 3-4 minutes. Salt immediately and serve.
