Ingredients

4 Boneless, skinless chicken breasts

1 28oz can stewed tomatoes drained

1 TB. Italian Herb Mix, Pasta Sprinkle, Tuscan Sunset or Frozen Pizza Seasoning

2 cloves garlic, minced or 1/2 tsp. Penzy’s Minced

1 egg, lightly beaten

1/2 Cup milk

1 Cup bread crumbs

1 tsp. Italian Herb Mix, Pasta Sprinkle, Tuscan Sunset or Frozen Pizza Seasoning

1/4-1/2 tsp. salt to taste

1/4-1/2 tsp. Penzy’s Fresh Ground Pepper to taste

1 Cup grated mozzarella cheese

1/2 Cup grated Parmesan Cheese

2 TB. Fresh basil leaves cut in strips

Preparation

Preheat oven to 350 *Combine the stewed tomatoes, Seasoning of choice & garlic. Pour into the bottom of a 9 X 13 baking pan. In a shallow bowl, combine the egg and milk. In a separate shallow bowl combine the bread crumbs and Seasoning of choice. *Dip the chickes breasts in the egg mixture and then dredge in the bread crumbs being sure to coat both sides evenly. *Place the chicken breasts atop the sauce in the baking pan, season with salt and pepper. *Sprinkle the chicken with the cheeses. *Bake at 350 for 30-40 minutes depending on how thick the breasts are until cooked through.. *Garnish with basil leaves and serve.
