Ingredients

4 boneless chicken breast (whole)

2 C bread crumbs

1 1/2 C parmesan cheese

3 T chpd. parsley

1/2 lb butter

1 tsp. pepper

1 tsp. salt

1 small onion, chpd fine

Preparation

Mix crumbs, cheese, parsley, garlic, salt and pepper. Melt butter. Pound chicken into thin breasts (or buy thin cut breasts). Cut into 3/4 inch strips. Dip chicken strips in butter then roll in crumb mixture. Roll up and secure with toothpick. Place in shallow greased baking dish and sprinkle with onions. Dribble with remaining butter. Bake at 350 for 30 min. Can add sauteed mushrooms. Good with rice and broiled tomatoes
