Ingredients

1 pound of chicken

spices(season salt, salt, pepper, paprika, onion powder, garlic powder)

lemon juice

butter

1/2 can of corn

5 mini sweet peppers or 1/2 sweet bell pepper

1/2 a large tomato

1/4 cup onion

1/4 cup fresh parsley

shredded lettuce

sour cream

shredded Colby Jack cheese

6 corn and wheat tortillas

Preparation

Cut chicken into bite sized pieces. Sautee chicken in non-stick frying pan with butter and spices to taste until chicken is lightly browned on all sides. Add approximately a teaspoon of lemon juice to chicken and continue to cook on medium heat for a 1-3 more minutes. Remove chicken from pan.

Cut bell pepper into small pieces and sautee with corn for 2-4 minutes on medium-high heat. Add lemon juice and spices to taste. Dice onion and parsley and mix for corn salsa.

Dice tomato. Shred cheese.

Combine chicken, corn salsa, tomato, lettuce, cheese and sour cream in tortillas.
