Ingredients
2 tbsp olive oil
Salt and pepper
1 15.5 oz can chickpeas (rinsed)
1 avocado, chopped
1/2 shallot, thinly sliced
1/2 cucumber, halved and thinly sliced
1/4 cup fresh mint leaves
2 tbsp rice vinegar

Combine ingredients in a medium bowl, then serve as a side salad.
