Ingredients

1/8 C olive oil

1/2 medium red onion minced

2 garlic cloves minced

1 jalapeño minced

2 t. curry powder

1 t. cumin powder

1 15 ounce can of chickpeas drained

1/4 c. chickpea flour

1/2 c. breadcrumbs

1/2 c. cilantro

3 scallions, minced

Juice of 2 limes

Salt to taste

Preparation

Saute onion, garlic, jalapeño curry and cumin until tender. Pulse mixture in food processor. Add chickpeas and other ingredients and continue to process for 20 seconds until coarse paste forms. Form patties and lightly dust with chickpea flour. Fry patties in olive oil for 4 minutes each side on medium heat. Finish the patties on a parchment paper lined baking sheet in oven for 10 minutes at 375 degrees.
