Ingredients

• 1 medium onion, diced

• 2 garlic cloves, diced

• 2-3 tablespoons olive oil

• 2 medium tomatoes, cut into 1/4-inch dice (or 1 can diced tomatoes)

• 2 cans chick-peas, rinsed and drained

• ½-1 pound Swiss chard, stems discarded and leaves sliced thinly

• ½ teaspoon cumin

• ½ teaspoon ground coriander

• ½ teaspoon curry powder

• 1 tablespoon fresh lemon juice

Preparation

  1. Sautee onion and garlic in oil in a large nonstick skillet over moderately low heat, stirring, until softened.
  2. Add tomatoes and chick-peas and cook, stirring, 5 more minutes.
  3. Add Swiss chard and spices. Cook, covered, until wilted, about 2 minutes.
  4. Add fresh lemon juice and season with salt and pepper.
