Ingredients
1 medium onion, diced
2 garlic cloves, diced
2-3 tablespoons olive oil
2 medium tomatoes, cut into 1/4-inch dice (or 1 can diced tomatoes)
2 cans chick-peas, rinsed and drained
½-1 pound Swiss chard, stems discarded and leaves sliced thinly
½ teaspoon cumin
½ teaspoon ground coriander
½ teaspoon curry powder
1 tablespoon fresh lemon juice
Preparation
- Sautee onion and garlic in oil in a large nonstick skillet over moderately low heat, stirring, until softened.
- Add tomatoes and chick-peas and cook, stirring, 5 more minutes.
- Add Swiss chard and spices. Cook, covered, until wilted, about 2 minutes.
- Add fresh lemon juice and season with salt and pepper.
