Ingredients
1 lb skinless boneless chicken thighs
1 T Asian sesame oil
1 T Chinese chili garlic sauce
1 T minced garlic
1 T minced ginger
2 t fresh lime or lemon juice
1/4 savoy cabbage, tough outer leaves removed, cored and very thinly sliced
2 oz raw snow peas, thinly slivered
4 scallions, incl green, thinly sliced
1/4 c chopped cilantro leaves
1/4 red bell pepper, thinly sliced
Dressing:
1/4 c rice vinegar
3 T peanut oil
2 T Asian sesame oil
1 T peanut butter
1 1/2 T honey
1 t dijon
1 t soy sauce
1 egg yolk

Preparation
combine chicken ses oil, chili sauce, garlic, ginger and lime juice in bowl. cover and ref rig 2 hours. Cook chicken on grill. cool slightly then cut into thin strips. Place in a large bowl, add the cabbage, snow peas, scallions , bell pepper and cilantro. Reserve. Proapre dressing by placing all ingredients in blender and process till smooth. Refrigerate, covered, until ready to use.
Toss the salad with 1/3 c of dressing, or as desired. Transfer to decorative bowl and serve immediately.
