Ingredients

12 oz bittersweet chocolate

1 pound butter

4 egg whites

7 oz sugar

Preparation

Melt the chocolate, set aside, Bring the butter to room temperature

Make a French meringue with the egg whites and the sugar. (that is, whip the egg whites until frothy and then add the sugar gradually.) Whip to stiff peaks and its cool. Add butter little by little. IT may look curdled, don’t worry. Add the melted chocolate.
