Ingredients
4 eggs
3/4 cup coconut milk
2 tbsp vanilla extract
3/4 cup honey
1/2 cup almond meal
1/2 cup coconut flour
1/4 tsp salt
1/2 tsp baking soda
1/2 cup shredded coconut
1 cup dark chocolate chips

Preparation
Preheat oven to 350F In a large bowl mix the eggs, coconut milk, vanilla extract and honey In a separate bowl mix almond meal, coconut flour, salt and baking soda Combine the wet and dry ingredients and mix well Fold in 1/2 of the chocolate chips Grease a muffin sheet and fill each cup to the top, cover with shredded coconut and the other 1/2 of the chocolate chips Bake for 30 minutes
