Ingredients
1 cup brown sugar
1 cup oil
3 eggs
1 egg white
1 cup flour
1 1/2 tsp. baking powder
1 tsp. instant coffee
1 cup coconut
1 cup chocolate chips
80 grams bittersweet chocolate
1 tsp. instant coffee
1/3 cup water
Preparation
Combine sugar, oil, eggs, egg white and salt. Beat well. Add flour, baking powder, coffee and coconut. Beat till blended, add chocolate chips. Melt chocolate and coffee with water. Add one third of batter to chocolate mixture. Divide rest of batter into 2 loaf pans. Top with chocolate mixture and marbleize. Bake 30-35 minutes at 180.
