Ingredients
7 ounces chocolate
1/3 cup strong coffee
1/3 cup flour
2 cups milk
3 Tablespoons butter
pinch salt
1 Tablespoon vanilla
4 egg yolks
6 egg whites
½ cup sugar
Preparation
Butter a 2 - 2 ½ quart baking dish. Coat with sugar.
Combine chocolate and coffee in heatproof bowl and melt over double boiler until smooth.
Wisk flour and milk together and boil slowly for 2 minutes, stirring.
Off the heat, add the butter, salt, vanilla, yolks and chocolate.
Beat egg whites. Gradually add the sugar and beat until stiff shining peaks appear.
Fold the whites into the chocolate mixture.
Pour into prepared baking dish and bake until puffed, 30 - 40 minutes.
