Ingredients

1 C FLOUR

1/2 C COCOA

1 C SUGAR

1 TSP BAKING SODA

1/2 TSP BAKING POWDER

1/8 TSP SALT

4 OZ PUREED PLUMS WITH APPLES

1 TSP VANILLA

1 EGG

1/2 C NON FAT MILK

1 T INSTANT COFFEE

1/2 C WATER - BOILING

POWDERED SUGAR

WHIPPED CREAM & RASPBERRIES (OPTIONAL)

Preparation

PREHEAT OVEN TO 350

LIGHTLY GREASE 9" CAKE PAN AND LINE WITH WAXED PAPER ON THE BOTTOM.

STIR TOGETHER FLOUR, COCOA, SUGAR, BAKING SODA, POWDER AND SALT IN A MIXING BOWL.

COMBINE PLUM PUREE WITH VANILLA, EGG AND MILK. MIX WELL AND STIR INTO DRY INGREDIENTS UNTIL ALMOST BLENDED.

COMBINE INSTANT COFFEE POWDER WITH BOILING WATER AND STIR LIQUID INTO THE BATTER UNTIL WELL BLENDED. POUR INTO PREPARED CAKE PAN AND BAKE UNTIL TOOTHPICK INSERTED IN CENTER COMES OUT CLEAN - APPROXIMATELY 30-35 MINUTES. COOL IN PAN FOR 10 MINUTES AND THEN INVERT ON PLATE.

BEFORE SERVING DUST WITH POWDERED SUGAR AND SERVE WITH WHIPPED CREAM AND BERRIES.
