Ingredients

1 tsp olive oil

1 onion, sliced

1 cup shredded chard

1 cup shredded cheese

Salt

Pepper

2 Tbs. all-purpose flour

4-8 ounces chorizo

5 large eggs

1/2 cup milk

pie crust (or not)

Preparation

Preheat oven to 350F. Heat oil on low in a large skillet and saute onions until caramelized. Add chard, salt and pepper to taste. Increase heat to medium and cook, stirring often, until chard is tender. Add chorizo. Combine eggs, cheese, milk, and flour in a separate bowl and beat until the ingredients are well blended. Fold in chorizo/chard mixture and pour into pie crust or oven-safe dish. Bake for 30-45 minutes, until mixture is set and top is browned. Cool slightly before slicing and serve.
