Ingredients
4 tablespoons fresh lime juice
1 jalapeno pepper, cored and seeded
1 clove garlic
1/4 cup lightly packed cilantro
1/2 cup olive oil
Salt and pepper
Preparation
In a blender, combine the lime juice jalapeno pepper, garlic, cilantro and oil. Blend until dressing is creamy. Add salt and pepper to taste. Variation: Cumin-lime Vinaigrette: Reduce cilantro to 1 - 2 tablespoons and add 1 teaspoon ground cumin. Whisk the dressing rather than blend it. For an extra spicy version, add 1 chipotle pepper from a can of chipotle peppers in adobo sauce and blend well.
