Ingredients
1 1/2 cups all-purpose flour
3 tablespoons sugar
1/2 teaspoon salt
5 teaspoons baking powder
1 tablespoon ground cinnamon
2 eggs, beaten
1 cup milk
2 tablespoons brown sugar
1/3 cup butter, melted
1 tablespoon vanilla extract
1/2 cup confectioners’ sugar
Preparation
In a medium bowl, combine and mix all dry ingredients.
In a separate large bowl, beat together everything else. fold in dry mix. Heat a lightly oiled griddle (at 375 degrees) or frying pan over medium low heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
