Ingredients

3 T. Canola or Olive Oil

2 T. sugar

1 1/2 T. Tarragon Vinegar

1 T. Mayonnaise

1/2 t. salt

1/8 - 1/4 t. onion powder (or use fresh grated or minced sweet onion)

1/2 T. Lemon Juice

1 Package Shredded Cabbage/Cole Slaw Mix

Preparation

To make dressing, combine all ingredients except cabbage in jar. Shake well to combine. Put chopped cabbage in a bowl, pour dressing over and toss well to combine. It may seem a bit dry at first, but cover and refrigerate and cabbage will wilt and release liquid. Let sit for at least 20 minutes. Remove from refrigerator and toss again. Season to taste with salt and freshly ground black pepper.
