Ingredients

1 pound regular tofu (medium firmness)

1 green onions

1/4 tsp paprika powder

3 tbsp Chinese hot bean paste

3 cloves garlic minced

1 tbsp cornstarch

2 tbsp water

1 tbsp grounded Szechuan pepper

1/4 cup vegetable oil

Preparation

Cut the tofu (bean curd) into 1 inch cubes. Chop the green onions. Use medium high heat to heat up a wok and add vegetable oil. When oil just starts to smoke, add the hot bean paste. Mash the bean paste with a spatula, then add the paprika powder. Throw tofu cubes in and give them several stir. Add szechuan pepper powder and stir several times. Turn down the heat to medium, cook for 3 - 4 minutes. While cooking, mix cornstarch with water. Add minced garlic and cornstarch mixture into the wok. Stir gently until tofu cube are covered by the thickened sauce. Serve with chopped green onion garnish.
