<1lb chicken, cubed
1/2 sliced onion
5 cloves of garlic, chopped
2 teaspoon ginger, chopped
1 can coconut milk
2 tablespoon curry powder
2 tablespoon butter
Olive oil
1 cup mushrooms, quartered
Preparation
In a large skillet, brown butter and mix in curry powder Add coconut milk In a separate skillet, saute onions, mushrooms garlic with the olive oil Once onions are translucent, add chicken Once chicken is lightly cooked, add to the coconut milk mix Turn heat to high until simmering, then cover, drop heat to low and cook for ~30 min
