Ingredients

2 lbs Boneless Chicken Breast, cut in 1/2" chunks

1 Large Yellow Onion, Diced

2 Cloves Garlic, Diced

3 T Canola Oil

2 T Curry

1/2 tsp Cayenne

4-5 Potatoes, Diced

24 oz Fresh/Frozen Tomatoes

2-14oz Cans Coconut Milk

Salt and Pepper

Preparation

Season the chicken with salt and pepper. Heat the oil in a large pan. Add the curry and cayenne. Cook for 1 minute. Add the onion and garlic. Cook 5 minutes, until onion is soft. Add the chicken, cook 7-10 mins until no longer pink. Add the tomatoes, coconut milk, and potatoes. Add curry, cayenne, salt and pepper to taste. Bring to a boil and simmer for 30-40 minutes until the potatoes are soft. Serve over rice.
