Ingredients
1 C panko
1/2 C coconut
1/4 C vegetable oil
1 tsp Old Bay Seasoning
flour
salt and pepper
2 eggs
orange/apricot marmalade
red pepper flakes
Preparation
Preheat oven to 350. Combine Panko, coconut and oil and toast breadcrumbs for 6-8 minutes. Salt and pepper flour, then dredge fillets, dip in egg and coat with panko mixture. Place a rack on a baking sheet and bake for 20 minutes depending on the thickness of your fillet.
Combine red pepper and marmalade to taste and use as a dipping sauce for fish.
