Ingredients
1 tablespoon/s Oil
2 tablespoon/s Sugar
1 cup/s Flour
3 teaspoon/s Baking Powder
1/4 teaspoon/s Salt
3 Eggs Well Beaten
1 cup/s Drained Crushed Pineapple
1 cup/s Sugar
1 tablespoon/s Oil
2 cup/s Shredded Coconut
Preparation
Cream oil and 2 tablespoons sugar. Sift flour, baking powder, and salt together. Add to creamed mixture and mix until crumbly. Add half the eggs and mix thoroughly. Spread in 8" square pan. Cover with pineapple. Mix 1 cup sugar, oil and coconut. Add remaining eggs and blend well. Spread over top of pineapple. Bake in moderate over (350) for 30 minutes. Cut into squares. Makes 24 small bars.
