Ingredients

¼ cup Quinoa

¼ cup Coconut milk

Dash Cinnamon

Handful of Almonds, Cashews or nuts of your choice

Pumpkin seeds (chia seeds or hemp seeds are also good options)

Stevia (only if necessary)

Preparation

Cook quinoa as package instructs. Add coconut milk to desire consistency/taste (amount will depend on the amount of quinoa in the bowl). Sprinkle in cinnamon to taste. Toss in the nuts and seeds. The nuts often add a sweet, rich flavor. If you need it sweeter, add a bit of stevia (be sure it is pure stevia since some brands have additional sweetener added).
