Ingredients
1 cup brown rice
1 carton chicken broth
1 can coconut milk
Salt
Hot chili sauce
Hoisin sauce
Brown sugar
1 lb. chopped turkey cutlets
Frozen shelled edamame
1 lb. snow peas
1 lb. string beans
1 small package fresh spinach
Grated carrots
1 red bell pepper
5 cloves garlic
Ginger
Basil
1 container pineapple
12 mushrooms
Cilantro
Peanuts
1 lime
Preparation
Cook 1 cup rice in 2 cups of chicken broth. Boil coconut milk with 1 cup broth, salt, chili sauce, hoisin sauce and brown sugar. Add turkey and frozen edamame. Cook 5 min. Add snow peas, string beans, spinach, carrots, bell pepper, garlic, ginger, basil, pineapple, and mushrooms. Cook 5 min. Spoon rice into a bowl. Top with turkey/vegetable mixture. Top with chopped cilantro, peanuts, lime juice and zest, and hoisin sauce.
